The cookie bits are chewy in a plasticky kind of way, and taste nothing like chocolate cookies. In fact, there are times when I couldn't tell whether it was a chunk of cookie, a dried-up/overfrozen bit of ice cream, gum, or what. You're right in that there's lots of cookies, but my complaint is that they overwhelm the ice cream to the extent that it's hard to evaluate the texture of the ice cream itself. Meh.
